Saturday Night is a modern day prohibition style beer that is easy drinking any night of the week. It pours straw to gold colour and completes the package with a thin white head.

An hommage to the past, this deep copper-coloured altbier (German for “old beer”) boasts an aromatic hop presence and a creamy head. A dry finish compliments its pleasant bready and caramel malt flavours leaving you ready for the next sip.

This light lager is straw in colour with a thin white head. Nice floral aroma and crisp finish. Thirst quenching and great for summer!

This Biere de Garde pours a deep amber colour with pleasant caramel, plum, and fig notes accompanied with a little warming on the palate.

This medium bodied ale pours jet black with a creamy head. Bold tropical fruit and citrus hop aromas are prominent.  Light roasted malt character is balanced with gripping bitterness and flavours of passion fruit, orange, and pine.

This light golden unfiltered IPA is kettle soured with Lactobacillus. This pleasantly tart IPA was generously dry-hopped to give it bold flavours of grapefruit, berries, and white grape.

Named for its resemblance to a Moose Antler. Lake Panache is a little piece of paradise here in the North. Many spend their summers on the lake fishing, swimming, boating or simply soaking up the sun and we hope this Session I.P.A. adds to the many great memories a place like Panache creates. Expect bold notes of peach and citrus from the generous additions of Citra, Simcoe, Rakau, and Mosaic.

This golden-yellow India Pale Ale is made for easy drinking but with enough hops to remind you it’s still an IPA. Shatter Cone has a refreshingly crisp mouth feel that will take you to the moon and back.

In honour of the smoking barrel, we have brewed this medium bodied Imperial India Pale Ale that pours a deep copper colour. Intense hop flavour and aroma are balanced nicely by clean malt sweetness and strong alcohol content.

Light golden with a thin white head. Sweet floral notes of honey, spice, and coriander. Medium bodied and well-balanced. Long dry finish with notes of nectarine and pear.

4×4 is not your average Quad; it’s strong and complex, bold and daring. This Quad is Mahogany in colour with pleasant Belgian ester notes including figs, plums, dates, and toffee. It is slightly sweet on the palate with a dry finish.

This tart golden Belgian ale is effervescent and boasts juicy flavours of pineapple, grapefruit and lemon. A puckering dry finish that will leave you wanting another sip.

This traditional German style wheat ale is both strong and sweet … just like a Valley Girl. The large quantity of malted wheat provides a sturdy base to showcase the playful citrus and banana characters of the yeast. This Hefeweizen is golden hazy on the pour and easy on the eyes.

This funky dark Belgian strong ale was aged in red wine barrels with Niagara cherries. It pours a deep amber colour with cherry, plum, and fig notes accompanied with a dry oak finish.

Brewed to celebrate our 4th Anniversary. This golden ale was aged with Brettanomyces and red grape must for several months. Expect sour, tart, funky notes along with red grape and tart dark fruit.

This funky dark Belgian strong ale was aged in red wine barrels with Niagara cherries. It pours a deep amber colour with cherry, plum, and fig notes accompanied with a dry oak finish.

Barrel aged for a year with a blend of bacteria and Brett. Nice acidity blended with some funky earthy spicy notes. Oak notes balance out the sweetness and dried fruit flavours.

We aged some Stack ‘72 in red wine barrels with Niagara peaches and added Brettanomyces. It pours copper in colour with aromas of peaches, pine, and funky barnyard.

Introducing the belle of the ball, the summertime gal you’ve all been waiting for, the one, the only “Mon Cheri” Cherry Sour. A huge hit with the staff, and sure to climb the power rankings on many lists, this 6.5% / 44 IBU Princess is our Expansion racked on cherries with enough sour zip to make your mouth pucker in sheer delight.

This traditional Flanders Style Farmhouse Ale is ruby brown in colour and was soured with lactobacillus, aged in red wine barrels for 10 months with a blend of brettanomyces yeast cultures. This complex brew features flavours of tart green apple, herbal spice, gamey with light fruit notes, all brought together with a dry oak finish.

After souring in the secondary with lactobacillus and brettanomyces we aged this ale on hibiscus flowers. It is bright pink in colour with citrus and berries flavours layered with funky aromas.
